Today is Teamwork Tuesday in the Ranger’s house tonight and their favorite way to celebrate a victory over the Nighlok Madimot spell on Kevin and the TigerZord is with Triumphant Teamwork Tacos! Just like the Rangers worked together to create the Tiger Drill MegaZord, tonight the Rangers are going to combine their smart and healthy cooking skills to make their favorite fiesta meal.
Can tacos be good for you? Yes – if you use the right ingredients. Sometimes tacos are very high in heart-hurting fats and calories, but if you make a few wise swaps, you can make them much healthier.
Traditional tacos are made with regular ground beef, white rice, refried beans, and topped with cheese, sour cream, tons of guacamole and salsa, and wrapped in a tortilla that has usually been fried. Although these ingredients may sound good, they are not necessarily your healthiest choices. Here are some suggestions for healthier substitutes!
Instead of ground beef, you can use 99% fat free ground turkey or chicken. Replace the white rice with brown rice, the refried beans with whole black beans, and the cheese with fat-free or soy cheese. SKIP the sour cream, use as much salsa as your heart desires, stick to one tablespoons of guacamole and then WRAP IT UP in a SMALL WHOLE GRAIN TORTILLA!
Triumphant Teamwork Tacos
- 1 tablespoon canola oil
- 2 pounds of fat-free ground turkey, chicken or soy-meat substitute
- 1 taco seasoning packet
- 1 cup brown rice (Follow cooking directions)
- 2 cups shredded lettuce
- 1 can of black beans
- 16 small whole grain tortillas
- 1/2 bag of shredded fat-free cheddar cheese (Or soy substitute)
- Red Ranger Salsa (see below)
- Green Ranger Guacamole (see below)
Red Ranger Salsa Recipe
- 4 large tomatoes, chopped
- 1 garlic clove, minced
- ¼ red onion, chopped
- 1 green onion, chopped
- ½ the juice of a lemon
- ½ the juice of a lime
- ½ cup cilantro
- 1 teaspoon cumin
- Salt to taste
Green Ranger Guacamole Recipe
- 1 avocado, mashed
- 1 small onion, chopped
- 1 clove garlic, minced
- 1 juice of a lime
- Salt and pepper to taste
Prepare brown rice by following the directions on the box.
Heat canola oil in a large skillet. Add the ground meat and cook for 10-12 minutes. Add the taco seasoning and mix thoroughly. Heat the beans in a small pot.
While the meat is cooking, you can prepare the salsa and guacamole.
Combine all the salsa ingredients in a bowl and set aside. Then, combine all the guacamole ingredients in a bowl and set aside (Keep the pit of the avocado and put it in the middle of guacamole to keep it from turning brown.)
Shred the lettuce.
Once everything has finished cooking, add 1/8 cup of the following to each tortilla: Brown rice, beans, meat and lettuce. Top with 1 tablespoon of cheese and 1 tablespoon of guacamole. Smoother it in your homemade Red Ranger salsa and it is Triumphant Teamwork Taco Fiesta!
