Blue Ranger Blue Corn Chip Salad

For Blue Ranger week, we had to think carefully - there aren't that many blue foods! We thought we'd share this great recipe for blue corn tortilla chip salad.  Be sure to use BAKED blue corn chips - they're much lower in fat than traditional fried chips.

Ingredients:  (Serves 6)

  • 1 pound 99% fat free ground turkey
  • 1 packet taco seasoning
  • 1 tablespoon canola oil
  • 4 cups chopped lettuce (Romaine, Spinach or Arugula)
  • 1 ½ cups diced tomato
  • 1 large red onion, sliced thin (Optional)
  • ½ cup fat free cheddar cheese
  • ½ cup fat free Monterey Jack or white cheddar cheese
  • ½ cup kidney beans
  • ½ cup black beans
  • Juice from 2 lemons
  • Juice from 2 limes
  • 1 tablespoon olive oil
  •   Salt and pepper to taste
  • 2 handfuls of BAKED Blue Corn Chips

Red’s Salsa Recipe


  • 4 large tomatoes, chopped
  • 1 garlic clove, minced
  • ¼ red onion, chopped
  • 1 green onion, chopped
  • ½ the juice of a lemon
  • ½ the juice of a lime
  • ½ cup cilantro
  • 1 teaspoon cumin
  • Salt to taste

Green’s Guacamole Recipe


  • 1 avocado, mashed
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 juice of a lime
  • Salt and pepper to taste


Heat canola oil in a large skillet and add the ground turkey. Cook for 10-12 minutes. Add the taco seasoning and mix thoroughly. Heat the beans in a small pot. Set aside.

While the meat is cooking, you can prepare the salsa and guacamole. Combine all the salsa ingredients in a bowl and set aside. Then, combine all the guacamole ingredients in a bowl and set aside (Keep the pit of the avocado and put it in the middle of guacamole to keep it from turning brown.)

Shred the lettuce.

On a large serving platter or salad bowl, place BAKED blue corn chips on the bottom. Cover the chips with lettuce, tomatoes, onions, cheese and beans. Drizzle salad with olive oil, lemon, lime juice, salt and pepper. Finish off Kevin’s Blue Corn Chip Salad with Red’s Salsa and the Green’s Guacamole.
